At Bittern Estate, our mission is to craft the most interesting and balanced wines by tailoring our winemaking techniques to each batch of fruit.
We carefully adjust our processes to enhance complexity and flavor balance, always keeping in mind the consumer’s expectations for varietal and regional character.
Our exploration of unusual varieties presents a unique challenge: identifying and highlighting their true varietal traits, and then crafting a style that accurately represents the variety, vineyard, and region.

Although Bittern Estate is a relatively new brand, our vineyard planted in 1997 is now mature, and our team comprises highly skilled and experienced professionals in horticulture, winemaking, and the broader wine industry.
