OUR WINE MAKING PHILOSOPHY

To make the most interesting and balanced wine possible by taking each batch of fruit on its merits and varying any or all the wine making procedures to achieve complexity and flavour balance with the emphasis on the consumer’s expectations for varietal and regional character.

Unusual varieties give the challenge to ascertain what the true varietal characters are and then to achieve a representative style for the variety, vineyard and region. Bittern Estate’s international range of varieties gives the opportunity to produce a truly exceptional group of wines.

Although Bittern Estate is a relatively new wine brand, the vineyard is now mature and the people behind the label are highly skilled and accomplished in their craft with many years of experience in horticulture, winemaking and the wine industry in general enabling Bittern Estate to produce wines of exceptional quality and varietal character.

Chardonnay

Made from fully estate-grown fruit, our Bittern Estate Chardonnay is pale straw in colour and has the intense aromas of melons and spicy citrus. The palate is long and complex with toasty oak and butterscotch finish.

Pinot Noir

Brick red in colour, our Pinot Noir has a rich nose of black cherries and spicy plums, a savoury palate with charry vanilla oak and a full body. The finish is spicy and long with hints of cloves and dark chocolate to round off the palate.
