To make the most interesting and balanced wine possible by taking each batch of fruit on its merits and varying any or all the wine making procedures to achieve complexity and flavour balance with the emphasis on the consumer’s expectations for varietal and regional character.
Unusual varieties give the challenge to ascertain what the true varietal characters are and then to achieve a representative style for the variety, vineyard and region. Bittern Estate’s international range of varieties gives the opportunity to produce a truly exceptional group of wines.
Although Bittern Estate is a relatively new wine brand, the vineyard is now mature and the people behind the label are highly skilled and accomplished in their craft with many years of experience in horticulture, winemaking and the
wine industry in general enabling Bittern Estate to produce wines of exceptional quality and varietal character.
WINES OF TRUE DISTINCTION
Our featured wines are a must for the experienced or novice wine connoisseur. Their elegance and sophistication will linger on the palate and mind long after the bottle empties.
Brick red in colour, our Pinot Noir has a rich nose of black cherries and spicy plums, a savoury palate with charry vanilla oak and a full body. The finish is spicy and long with hints of cloves and dark chocolate to round off the experience of this very special new-comer to the list of great Peninsula Pinots.
Traditionally, Pinot Noir is one of the most versatile wine styles for matching with food to enhance the combined experience of food and beverage.
Our Pinot Noir will compliment a wide range of food from stir-fries to roast meats but is partially suited to meats like duck, venison or lamb and will combine admirably with many Asian styles of cooking without overpowering the subtle flavours of traditional herbs and spices. Serve between 12 and 16˚C after allowing at least 30 minutes to breath.
Intense ruby-red colour matches the intense nose of dark cherries and rich spices. A palate of plums with pepper and cloves followed by a long, silky tannin finish with undertones of chocolate and cinnamon gives the complexity that shines out with great, cool climate Shiraz.
Although the cool-climate Shiraz style is generally not as heavy as the bold warm climate styles, they are commonly more elegant and “food friendly”. Very much in the Rhone Valley style, our Shiraz is a great accompaniment for full-flavoured dishes. It is particularly well suited to spicy, slow-cooked meats as well as char-grilled steak with rich sauces.
Serve between 12 and 18˚C after allowing at least 30 minutes to breathe.
